Southwestern Style Chops

+ 4 lamb chops
+ 2 c. onions, roughly chopped + 2 cloves garlic, chopped + 4 tomatoes, whole, canned; coarsely chopped Seasoning blend; + 2 Tbsp. chile powder + 1/4 tsp. oregano, dried + pinch cinnamon, ground + 1/4 tsp. cumin, whole seed + 1/2 tsp. salt + 1/2 tsp. black pepper, crushed + 1 c. beer, divided What to do:
1. Combine seasoning blend and 1/4 c. of beer into a paste. Coat the chops with the paste and place Marinate for 30 min.
2. In a skillet, add 1 Tbsp. olive oil, cook chops on both sides about 3 min. per side. Remove chops. In same skillet, sauté onions and garlic. Add chopped tomatoes and rest of beer, reduce sauce to thicken by gently boiling (6-8 minutes), stir occasionally. Serve with Chops. Wine pairings:
Shiraz/Syrah, Côtes du Rhône, Merlot
